Although it's technically Winter now, I had come up with a simple, Fall-inspired breakfast to start my day off with the feeling of being curled up with a blanket by the fire. The idea came to me while looking through my pantry one morning while exploring a new appreciation (and somewhat obsession) with pumpkin after Dave's sister-in-law, Laura (an amazing chef & baker) turned me onto it! Anyways, what I came up with was my chocolate-butterscotch-pumpkin oatmeal. It left me feeling satisfied, warm, and full for the next few hours which, in my books, is the best start to any chilly morning.

- Quick oats
- Milk
- Puréed pumpkin (amount to your discretion - I used a couple of tablespoons)
- Chocolate chips (I used semi-sweet)
- Butterscotch chips
- Pumpkin spice

- Pour your desired amount of quick oats to milk on the stove, stirring to keep the milk from burning.
- When the oats come close to looking done, add in the puréed pumpkin. This will turn the oatmeal to a slightly orange colour, but trust me, it's delicious. I used a couple of tablespoons in my oatmeal, but the amount can vary depending on how much you're making.
- Add a dash of pumpkin spice and stir well.
- Pour in a bowl and top with some chocolate and butterscotch chips.
- Stir, and enjoy!
