Summer is officially here in Vancouver with the onset of what seems to be a heatwave. It's been so hot that I haven't wanted to do much for the past few days except shower to get the stickiness off me and do as the Spanish do and have a siesta (which I really feel should be mandatory for everyone).
Along with the heat comes the discomfort of being in your own skin when you can't seem to cool down, so obviously the last place I want to be is standing in front of a hot stove making dinner. So, tonight I incorporated an easy watermelon summer salad to keep dinner light and refreshing to cool us down after a hot day in the sun.
Ingredients
- Watermelon (I used half of one)
- One tub of mini bocconcini (I used one 200g tub)
- One box of cherry tomatoes (I used golden ones for some colour variety)
- A few sprigs of mint (chopped)
- Balsamic reduction/dressing of your choice (I used a fig balsamic Kraft variety I had available in my fridge)
Directions
- Start by cutting up your watermelon into bite-sized pieces and throwing it into the salad bowl of your choice.
- Next, chop up about half of your cherry tomatoes and leave the rest whole. This will reduce the amount of liquid that ends up sitting in the bottom of your salad. Throw them in!
- Drain the bocconcini and add it in along with your chopped mint.
- Toss the salad and finish by drizzling it with the balsamic dressing of your choice.
